when this was built, the cross bracing was added to keep the walls square while the roof was being built and they just didn't take them out, the same goes for the brace going up to the peak...

The difference is going to be, concrete wont give as sheatrock will somewhat. Like I said, if everything fits tight enough, stick it up with out trim and if it does expand and buckle, you could trim...

As others have said, yes you can but no you dont want to, it's a PIA to trim out. If your trying to save space with the swing of the door, ya might look into "pocket doors", no loss of swing space,
