I'm in the steel liner panel group. 'Light' weight, no drywall dust, no repainting, no sag, relative ease for install, gloss for light reflectance. Just my opinion but I've never liked OSB texture even when painted.
I like option 2, it gives you the chance to have 2 projects going, still have room to pull another vehicle in case of weather. Easier access with the angled lift instead of a hard 90.
I would think the lifts should be next to each other. That way the tool box can stay in between them and save time getting tools. I know my 2 post basically takes 1 1/2 bays so the 4 post should only take 1 bay.
I have a Triumph C7000, it's portable just like the MaxJack. Same concept just lifts higher and lower priced.

Do you know you're not supposed to keep a torque wrench at a 'permanent' setting?
Once done with them you should release the torque back down to 10 or less. It has to do with the tension on the springs inside.
What's the truss spacing 24" or 48"?
For that size building and going inexpensive your main options are fiberglass or installing metal panels and blow in cellulose.
I doubt you have a Menards but they do make a 4' wide roll...
I would stick with the 1/2".
I've never heard of anyone complaining about too much oomph to get a nut loose. If you really need a smaller size maybe a power ratchet in 3/8"?
Like kjmustang said get rid of the bats. They will $h!t all over everything, wood rot, plus any poo disease. I've had them in my barn and still struggle to keep them out. They ruined the paint on a car I had in there for just 2 weeks.
