It's a toss up between sanded ply and beaded pine paneling. Plywood is cheaper but doesn't look as nice. Beaded pine is twice as expensive but it looks nice and apropos for a wood shop. I briefly considered drywall, but decided against it based on it being easy to damage and get dingy.
