Oh, the other question: any thoughts on the Eaton interlock on this Westinghouse panel/legality of the arrangement? It obviously works but one isn't listed for the other.

Just the meter going into that top 100A breaker. The generator does list "Neutral Floating" in its spec sheet. Despite using that adapter to power the whole panel with the generator's 120v, I figured I'd go with 3 conductor to support 240 - albeit at 30A.
