Here's my favorite new tool: this tool cart. holds up to 200 lbs, and can roll right underhood so I have tools at my fingertips, and I'm not scattering them all over the engine and radiator support. takes up minimum floor space otherwise.
Have you considered a shed in the yard to help contain some of the finds and projects? I often see these advertised for nearly free, and there are guys on craigs list who have a truck to move them. I'm considering one to get the lawn tools and spare parts out of my car/boat workshop.
Nice work. I too have the challenge of a low-ceiling garage really too small for two cars, but wanting to put two in on occasion. having nearly everything hanging, or on wheels helps me reconfigure as needed.
