Update:
Replaced the thermostat with a new unit and things are working perfectly. I'm able to monitor and control the temp of the shop from the comfort of my home!
The heater has 4 options for blocks on the thermostat wiring - R, G, W, C
When I hook up the wifi thermostat I use the following configuration
Wifi Thermostat
(Heater-Thermostat)
R-R
W-W
C-C
G-G
Seems to me like the R and W are fine as they work ok with the analog thermostat.
Perhaps I need...

*The wifi thermostat does have a jumper from R to RC that was factory installed. Per the instructions in the thermostat manual, "Remove metal jumper only if you have both R and RC wires"...
