The new m1/m2 macs are nicer than any of the intel versions. Just buy the cheapest of whatever fits your needs and they will be fine for much longer than any of the iMac Pros you are looking at. Or don’t, and then you’ll be buying new stuff again when Apple stops supporting intel products.
