Ah so my thinking would be if you reduce the slope, you raise the side walls to make up the difference and yield more headroom in the loft area across the 30' span of the building that way.

Given the current supply chain issues and their prior ETA of "Coming mid-to-late Summer 2020", I assume they are going to be delayed. I ordered a jack plate from Bendpak and it was over 2 months delayed.
Your mileage may vary but I've never once had any issues with stacking the blocks or any slippage or anything like that. Even while starting the car on the quickjack.
I've used the quickjack with vehicles large and small (silverado and miata).
I've been using the quickjack 7000 since 2016 with the rubber blocks picking up everything from my truck to a miata and they don't shift.
Heck, I've even had the Miata running on the quickjack to find a vibration and they don't shift.
I wouldn't overthink it IMO.

My truck has an 8' bed w/ a crew cab. And it's a 3/4 ton so it's longer & heavier. So you should be good to go there.

Yep. Last time I got weighed, my truck was 6,60x lbs (curb weight stated to be 5,755 lbs but with fuel, tools, random junk, etc. it gets up to a little more. Love this tool!
