The countertop will be cable free outside the 2” from the back of the appliance to the drop underneath to the plugs. I will try and get better images up later. That amount of cable will be protected behind the 19 inch wide espresso machine, even, so wipes and spills will never even come close...

Those are some great ideas, but the plan was to have the outlets below the main countertop, underneath. We will have a notch in the countertop for the cable drop.

While I do my testing work, I'd like to talk over PVC vs metal boxes. Since these will be surface mounted, I was planning to use metal for rigidity, with metal faceplates. PVC would be nice, though, because (my understanding) is that there would be one less ground pigtail to ground the box...

Would this be so that I would throw the breakers on the cart and not the venue breakers? So something like wire my power cable to a laodcenter with 20a breakers, and then supply power to 15a or 20a recepts for my equipment? Since I'll never know the venue breaker amps, wouldn't that put me back...
