Curious what perspectives I will get on this one.

The building will have its own service as there is electrical service along the north side of the property, already costed this option out to be the most direct, and therefore aligned on cost. Running form the house would require an upgrade on the home (not is scope for historical reasons)...
With you but working to match the existing house within reason which was the driver for the (2) dormers originally. given the feedback here we are going to go back to three and widen them to 5' outside dimension.
the upstairs is to be finished out later as a multi-use area - but in the future...

Rather have more than enough, than not enough. Running up to two mini splits (HVAC) in the future (60A) and a large compressor (30A), welder (30A) etc. 200A ensures i have a safe power budget.
Thanks for this, I agree on being prescriptive. I'll plan to collaborate with my builder and develop the contract language with them on what is to be used. Thankfully the builder I have chosen is coming back with a decent quote number that I am comfortable with even with some additional cost...
