Just thinking outside the box, is there any reason that you don't replace the door with a Roller Door? There would then be nothing in the way of the lift when the door is either up or down?

A couple of options for sinks are an old Gas BBQ Cylinder (LPG?), just be careful when cutting it in half. The other is an old Beer Keg. You can use Beer taps for the water too, although you might get some disgruntled punters getting water, not beer ;)
