i would use a cutting torch or good plasma cutter with a guide. That how i have cut thick metal

if you went to speedway motors they sell valve cover spacers for 351windsors, so you can use your stock valve covers. Im just found them because i want to go the same route

i use 5 on acetylene and 20 on oxygen works really good on just about anything

that is one amazing a garage
