Epoxy is good for grain filling and impact resistance, but it requires UV protection (varnish) or it will fail. Epifanes by itself requires initial thining and sanding between the 7 coats and watch out for extended dry times in high humidity.

Two part epoxy paint or catalyzed waterborne are the standard for high impact cabinets. I used a hammered paint on my own shop cabinets and its bulletproof and easy to use, but you have to like the texture for that to work....
I agree with your assessment that the adjacent 6x6 is carrying all the load. If it were me I would remove the door then try to support any of the exterior wall with a post or a jack. I would cut out a good 4ft length of the 6x6 and insert a new section with a long lap joint at each end glued...
Find and old treadmill (I see them on garbage collection day all the time) and cut off the rubber belt. It makes for a good non slip surface for worktops drawers shelves et.
The cosmetics on your current set up are very easy to fix. Drywall work always looks horrible and daunting but it is fairly easy to do yourself and not that expensive to sub out. Plus it's a garage and it doesn't have to be perfect.

Seriously though Titebond 2 or 3 for everything, but when I need something with gap filling properties I use thickened West System 2 part epoxy its the strongest thing you could hope for.
