if you had a rental excavator, the best way to remove stumps is to leave the the rest of tree attached. Dig around stump with mini-ex and push it over. I have take 50+ trees that way on my land.
Interesting that you set the rafters before the wall girts, but I see why you did so. Any issues with that method?
Also your grade board is on the outside of the poles, did you move the wall girts out 1.5"? Or you gonna add more wood. Hard to tell from the pics

Besides the galvanizing, I would go with the I Beam. I Beam and Channel is the only way to build trailers. Tubes trap moisture and they rust as you have found out.
