If the ceiling will support it (the framing, not the sheetrock), then you should consider hanging shelving from above.

How much room do you have above the ceiling? I have a 10' ceiling, and just cut a roof-sized hole in it to give a couple extra feet of clearance.

Hard to say what's the coolest thing, but I think the thing I'm most proud of about my garage is the 500+ square feet of shelving that is suspended from the ceiling. The lift and air conditioning would be a close 2nd and 3rd.
