    After further research, I think I am going to give the Rockwool ROCKWOOL Comfortbatt R- 23.0 (24" on centers) a try. I like the idea of the being moisture resistant, fire-resistant, sound dampening (since my detached garage is in the middle of a neihborhood), and much easier to install.

    For the attic space, I am venting out at top at the top ridge. A vented closure strip was installed. I am not spray foaming the roof deck. The only thing on the underside of the roof metal will be the Dripstop lining. The insulation will rest on top of my ceiling at the bottom of the attic.

    It is the same on my roof. I have a vented soffit and a vented ridge cap, so I am going to be installing eve vents, a vapor barrier, install a metal ceiling and have blown in insulation for the ceiling.
