If a 5 speed ceiling fan is wired direct to 120 volts what speed would the fan be running at? High?

I watched a video from an engineer. His subject was, Why do most if not all multi speed switches start on high. I do not remember his answer.
I have two ceiling fans in my shop, The speed control is in the fan housing. Both fans start on the speed they were left on when I switched them off. My night table lamp switch starts on low. the second position is medium. High is low and medium together.

The fan will be at max RPM as long as there isn't a speed selector built into the fan. Most shop style fans are one speed and the speed selector is in the wall control vs. having a pull chain selector on the fan. If you happen to be using "house" style fans, make sure they are on high before you put the ladder away.
