Anyone have any experience with WestCoat EC36 100% solids epoxy?

Bit the bullet and orderd one kit to coat the floor under where some machines will be sitting. I'll do the rest of the shop in a few months.

My biggest question is, what's the best way to go about prepping the floor?

Can I mix a gallon at a time? Somehow extend the pot life? I'll be working alone....

Not familiar with that product. Best floor prep is thorough cleaning and then grinding. As far as how much to mix at one time consider the manufacturer's instructions on the product. That should tell you how much time you have to work with it and how much coverage you can expect.

Floor prep for mostly all coatings is the same. Make sure the floor has no moisture coming out of it (test with the clear plastic sheet test method). Then either etch with floor etch or diluted muriatic acid, rinse well and let fully dry. Alternately diamond grinding is better but if you grind this really 'opens up' the floor so you need a primer otherwise the epoxy will sink in unevenly frequently.
