Hello, fire victim....new garage decisions

Well in posty garage in a fire this past Monday, lost everything. 26'6"x34', older barn style, loft in rear split in two (storage / office)

I'm in Nova Scotia Canada. Max insurance limit to build is $50200. I only get that if the contractor says it will cost that much, they build it or I accept their calculated cost and take the cash.

Think I have to build on the same spot, when they come to do their clean up, will they pull up the old slab? Cause it sucked, pitted, patches. Killed a creeper!

How low of temperature can they pour foundations?

I do a bit of everything; welding, machining, work working, mechanical. What is the epoxy good for? Oil grease abrasion? Welding?

I need to figure how to organize the different areas for those activities, get the most space for storage and an office.

I used to have a two story barn style 22x44 w 10' ceilings. It was great but lost it in a divorce. So just looking for ideas or floor plans/materials to best house th differing activities
