I saw on TV epoxy applied with a squeegee

Has anyone done it this way? I don't think the guy used a roller at all. Just squeegeed it out back and forth and kept the puddle moving where he wanted it to go. Is this how most professional jobs are done? Can you mix up one big batch to do it this way?

Yep, watch a couple of the vids on youtube. Most 100% solids are applied with this method.

High Builds are typically squeegeed and back-rolled.
There are notches in the blade allowing the material to flow through.
