Hey just pick out a hodgepodge of stuff one 80 gallon champion air compressor. One 7.5 hp and 5 hp baldor motor and this compressor pump that I can’t ID. Here’s some photos. Would like to find out if the 7.5 hp motor is compatible with the pump don’t want to overload the pump. Thanks for looking.

you won't overload the pump. you can only under/overSPEED the pump.
assuming the pump is running at a happy speed, a higher HP rated motor than needed will not change the behavior of the compressor.

So, this thread might turn into a Wayne restoration project. Now, let’s figure out the plumbing. The po had copper and this stainless line, but it looks like there might been some 5-year-old doing the plumbing. Do you have any suggestions on what size lines and if I should use cooper or something else?

Depending on what fittings are in the head, I'd try to use a 3/4" copper tube for the intercooler line and the discharge line. Bigger is better to a certain extent. More surface area for heat rejection. Finned tubing would be best but it would be difficult to work with, and I'm not sure where you would source bulk quantities.
