Issues with turning off water heater?

We recently got a lake house and it has an electric water heater that is about 2 years old. The previous owner had a heavy duty on/off switch installed. When we leave, we turn off the water heater and turn off the water to the house at the curb.

When we get back we turn both of those on, and then in about 30 minutes turn on the hot water at the sink to relive the pressure.

So far no problems, but are there any concerns with the cooling water in the tank imploding itself ?

While it's possible a strong vacuum could be developed, it is more likely that air in the water will boil out at a low vacuum or a faucet will leak in reverse, adding air to the system. To allay any concerns crack open one faucet after the water is shut off.

Not really that issue, but if there are any leaks and the level of the water drops in the tank, the upper heating element could burn out if not immersed in water when you turn everything back on. I would turn on the water first, let some run out of a faucet with the hot water handle on to allow any air to escape. After letting the water run for a few minutes, then turn the water heater back on.
