i think because they are supposed to grip the middle of the bolt, not just on the points. So if you have a bolt that's already started to round off, you don't just round it all the way out trying to loosen it.

Hmmm I guess to make up for poor quality.....if you look at any top of the line wrench the deep part more swooped then a cheapy....this allows for grip on the side then at the to adjoining points...more grip more torque less rounding of bolt.....same with sockets
