Studded Pole Barn Insulation Question

Hello, I have a new pole barn that is sitting on a concrete slab that has a plastic vapor barrier underneath. My plan is to ‘finish’ the lean to portion of the pole barn so we have a place to hangout on our property. It will be heated and have AC as we are located in the foothills of Blue Ridge mountains in VA.

As you can see from the picture the walls are studded out on 16” center with 2x4s and the ceiling is 2x6s on a 24” center. Eaves have full soffet. I was thinking about using R-19 on the walls and ceiling as I plan to Sheetrock the interior. Should I be concerned about the metal roof or sides sweating and ruining the insulation? I don’t think the insulation will touch the metal due to the horizontal 2x4s used to attach the metal. The bottom of the metal on the walls just has a rat guard so it allows some air flow. Don’t want to break the bank on insulating it but i certainly don’t want to waste money or make a big moldy mess or sweaty building. Thoughts on insulating my situation?
