Is it ok to put any of the coats down, and get to the next coat in less than 24 hrs? IOW, is it ok to spread the coatings out over a 2-3 day period as long as none of them are 24+ hr between?

Yes. You can recoat as soon as your steps doesn't leave an impression, for the prime coat of BondTite 1101 that can be 3 - 6 hours, and for the body coat of LiquaTile that can be up to 12 hours, you should then recoat within 24 hours. Do not exceed the 24 hour window.

If you go beyond 24 hours scuff the surface with a blue, detergent free, ScotchPad and then wipe down with MEK or denatured alcohol, the apply the next coat.
