Afternoon I have a fiberglass insulated 30x40x16 shop. 14x14 door that has insulation on it as well,
I recently had a 5 ton package unit installed. And I’ve been leaving the AC off during the week while I’m I’m at work.

This evening I opened the shop, and it smelt musty. Can anyone help me understand why this is happening? And any solutions?

Sounds like to me that you need some air exchange in the building. You have a sealed container that will promote stale air and growth of bacteria. The new concrete will provide the moisture for the smell. You have to let the building 'breathe'

Perhaps because you let it get too humid inside?

If you want to leave it off most of the time, I recommend installing a humidity alarm.
I have a great (Temperaturealert brand) humidity/temperature alarm, but it isn't made anymore. It will email me and text me whenever the temperature or humidity rises too high or falls too low.
If this is something you're interested in, say so and I bet someone will chime in with a good device.
