Suggestions for 30x 60 Shirk building please

I'm close to ordering a 30 x 60 Pole barn from Shirk. The location is northern NJ.

I'd be grateful to get any suggestions about additional items, contract process, work that should be done now etc etc.

Can anyone comment on a choice between 30x60 & 28x64 for a garage / workshop?
I'm limited to about 1800sq ft without a variance.
