It is perfectly ok to remove the drip leg and extend the pipe. It is still effectively there.
I have opened drip legs and had debris fall out. Debris that easily could have temporarily stopped gas flow, put out the pilot and then continue. So you have gas flow with no flame. That is why it is on unattended appliances.
A $1 insurance policy. Seems cheap to me. I've seen examples of a house with uncombusted gas filling the space and suddenly exploding.
