I don't know if this would work for you but what I did was create a recess on the wall that I will cover with a panel. It's behind and below where my workbench is going to be, so out of site but accessible. I have a switched outlet in there with the transformer. The wire from the transformer runs inside/up the wall and comes out under the cabinet where the lighting run starts. It's controlled by a switch on the "backsplash".

Maybe something like that if you have a spot?

I something very similar to these under the cabinets in my shop area. Great light output and can be daisy chained together.

I used a similar kit to joe's link above. Menard's had 16' kits on sale for $20 so I bought 3 to use in my kitchen. They look great and went together easily though the sticky backing doesn't hold upside down all too well so I had to put a few wire staples in some places to keep the strip from falling.

I don't see the color changing 16' kits but here's the 10' one:

If you have Ikea around you, they have some nice cheap selection of under cabinet lights for kitchens. Maybe you can use them.

I used some flexible led strips from vleds that I had lying around, which are unfortunately no longer available.. I just took a length of 3/4x3/4x1/16 aluminum angle and installed a toggle in the middle.

Then I stuck the led strip on, wired everything with 18/2 wire. I used a 12 supply I installed in a pvc box on the wall.

Superbrightleds has some good options as well;

(sorry for the crappy cell pics... All I have right now...)

it takes awhile to get here.. but the rolls of led lights on ebay are a nice option. order an entire roll and the 120 volt little plug in power adapter, and stick them up where ever ya want. I would order the water proof kind simply for the sealed and little more robust factor.

I tried the rolled up strip of LED lights and found that they did not give me enough light. I ended up moving them under the work surface and they light up the tool drawers nicely when I get into them.

I ended up going to SuperBrightLEDs.com and buying the WLFA2 light bars. At the time it was the brightest thing that they had. I installed two strips under each cabinet. Here's a pic with the first light installed. I figure if they didn't work out, I could use them on the Jeep as rock lights since they are water proof and run on 12vDC

Night picture... Six WLFA2 bars under the cabinets, 2 side by side under each cabinet.

Related to the OP's question - looking for under cabinet lights that I could plug into the powerstrip and not hard-wire or need to use a DC power supply. This may not be a long-term residence, so I'm setting things up that I can easily take with me.

I didn't think you were supposed to put anything in front of, or right next to, a circuit breaker panel. I am not an electrician so I am no certain that, but I am pretty sure I read that some place or other.

Your correct.

To the OP, I used fluorescent under cabinet fixtures that I had collecting dust, rather then buy anything, attached to recycled tract home kitchen cabs.

I am also looking for some kind of strip LED lights for my garage cabinets too. I happened to find this review list http://www.reviewswise.com/indoor-kitchen/indoor-appliances/under-cabinet-led-lighting/ mentioning about the best strip LED lights in amazon (though they are for kitchen cabinets). Have any of you used one of the products listed in this list? If you have, I'd like know you opinion about it.
