what kind of a single switch do I need...

would like to wire up a 3 position switch to run a pedestal grinder and the shield lamps. The grinder is a 3 phase 1.5hp, running off of a VFD. Also, I have a 230 to 115 transformer I can use for the lamp power. What kind of switch setup do I need to look for, and what else may I need? Any wiring diagrams/tips would be much appreciated as well.

I'd like to have one dial switch that has everything off in one position, the next position powers only the grinder, and the next one powers the grinder and the lamps.

Putting a switch between the VFD and motor is NOT a good idea.

Instead use a switch connected to the control terminals on the VFD to control the starting and stopping of the motor.

Put the light on a separate switch.

You can use a “HOA switch” (google that term) which is a rotary switch with three positions and contact blocks that can be swapped/stacked to purpose.
Typically turning the switch left operates one contact block while turning right operates both.
One block for the VFD control circuit and separately, the other for the light.
You need to check the control requirements of the VFD to see if it needs momentary or maintained closure of the control circuit.
If momentary is needed, you’ll need to use a push button for the VFD.

Most cities will have an industrial control supplier you will need a few accessory switches about $40 out the door.

I 2nd that emotion - the VFD will not like having it's output open circuited.

The OP could do it with a selector switch but by the time they bought the correct operator, contact blocks, & enclosure, they will find two switches to be far more economical and not really that inconvenient.
