Unused speaker wires in ceiling. Cover them how?

I'd just push them through, spackle and paint as best I could. If it's not perfect don't worry too much about it. Let the new homeowner repaint the entire ceiling if they choose.

    Portable generator tri fuel conversion

Check out US Carburetion - MotorSnorkel I've used several of their kits without any issues. Propane is easy, it's 11" water column for pressure on most all regulators. Gas pressure is about 7" water column - but there are variations. Not sure of what seller you are looking at but there are...

    Decent astronomical timer?

I've had the ST01 above for over 15 years. I've only changed the battery once during that time. It cycles on off twice per day during that period.

    Generator connection to home

You could use an interlock. It will allow you to choose ANY or ALL of the circuit in your house to run. Of course you're limited by the generator output. It beats a transfer panel and is usually very easy to install.

    Garage door opener and GFCI

The cord/plug is a disconnect. NEC 430.102(B)(1) requires a disconnect if you hardwire the opener.

    Garage door opener and GFCI

My understanding of the code requirement is that the garage door opener CAN electrify a metal door if there is a ground fault and result in a shock/electrocution hazard. I've never had a GFCI trip on the opener in 15+ years.

Exterior Light Option. Traditional barn light or Sofit Lighting?

Many of the LED soffit lights have spring clips to hold them in. They weigh almost nothing so if you have vinyl soffits it's easy. I used something similar to these: LED soffit light

Exterior Light Option. Traditional barn light or Sofit Lighting?

How about a picture of your barn? I like the "cleaner" look of soffit cans but it depends upon how much light you need.

    Sub sub panel

What are your future anticipated loads? For now, lights and doors, maybe 30 amp, 240 volt feeder. Use #10. What is the soil like? Do you want direct bury? I'd use conduit and THWN. Oversize the conduit and you can pull a new feeder if you ever have too.

Should my fridge run 23 hours out of 24? Seller says its normal

Look for a "Kill A Watt" meter. Kill A Watt There are cheaper versions out there. Does seem an excessively long time to run.

Table saw motor won't stay running

Is it wired correctly for 120 or 240 volts? Bad start switch?

Will my garage setup work with a jack-shaft opener?

Looking at the picture of the right hand drum, the cable looks damaged. Just below it. Might want to get that fixed first.
