If you store a bunch of flammable/hazardous/oxidizer/acid material in any building you should consider getting a NFPA sticker/sign for you door. It will tell the FD what the expect and warn them of any hazards.

If the missing riser bothered you that would certainly be an option. We like the ease of use by just being able to slide a board in and be ready to go. That saw gets a lot of use and if the riser was removable/hinged it would probably be left out or open.

You need to hire a local, licensed (PE/SE) structural engineer. Just a heads up but this will be very expensive to build. When we do structural decks use $1000 per CY installed (in Arkansas) to do our cost estimates and that does not include the structural steel supports.

We installed the sheetrock around the stairs. The fit is ok but the intention at the time was to cover the small gap with a trim board. Has not happended yet and I doubt it will.
