That would be a very good idea. When filling gaps around doors and windows use only the low expansion foam. If you do decide to use spray foam on the walls be sure it is at least 2" thick closed cell foam. That will eliminate condensation within the wall cavity which would be a very bad thing...
Jack - No cringing, just fascination at your attention to detail. Your play stove solution is ingenious. I even like the surreal effect of the wall stud bisecting the cook-top. It kind of compliments that Wizard-of-Oz thing.

ZKLing did mean the power supply from inside a computer. Amazon sells an ATX computer power supply for $12. It is a fairly easy job to modify the supply for 3.3V, 5V, and 12V taps. Google "ATX power supply conversion". I did the conversion for my electrolytic rust removal system. It works great...
The furnace went out in my cabin in Maine a few winters ago and all the plumbing froze. We lost two toilets and 2 faucets, but all the pex piping survived the thaw. I have experience with the pex plastic clamp bands, the metal bands, and sharkbite fittings. All have performed well.
