I hated mudding drywall also so i did this over joints and just diid the screws which require very little sanding,in fact i think a used a sponge. the joints are covered over in cheap Luan plywood cut into strips and painted before install. Used wood moulding at corners.

SINGLE One door , one track one set springs one opener to maintain.I can't count how many times i pulled into center of the garage to do brakes ,rotate tires.even just vacuum cars out.

Another vote for vertical,I did mine vertical because when i did our basement I had some **** joints to tape and mud, For a DIY"er this is way harder than a tapered joint. At least it was for me.
