I live in Florida, do I want gas?

First of all, you will not be able to run the gas line from the main to the meter yourself. The Gas company or authorized sub contractor will have to do that. Secondly, they will not set a meter unless you have a plumbed use for gas installed and inspected. Thirdly, this is the free state...

    killing Zoysia and Bermuda grass

Sometimes I feel the best way to kill it is to try to grow it intentionally. It'll die just to spite you.

What type of drywall should I use? 5/8, 1/2? Moisture resistant?

The end butts are staggered. What you see is the screw line markings.

Buying a new U.S. General Series 3 or Icon from Harbor Freight vs. a used Snap-On or Matco toolbox

Got this Mac Tools Tech 1000 off FB Marketplace a few years back. Mac warrantied a complete set slides for it too even though I wasn't the original buyer.

    Enclosed Patio over Stamped Conctrete

No footing. Need to address this if you want walls and a roof.

Shop build, wall is out of plumb

Gonna have to **** it up and remove the sheathing. No amount of racking and come-alonging will pull it plumb. The roof sheeting alone will make it hard to pull it plumb.

    Some long overdue framing reconstruction

Might want to think about addressing the wood rot at the roof to wall interface above that room.

Any first hand experience with a NorthStar AC with quiet intake?

After 6 plus months I can say I'm really happy with it. I have been using my blast cabinet a bunch lately and it has no problem keeping up and I can still hear the stereo while I'm working.

Retaining wall for garage site leveling?

Stem wall would be my choice also. Check code for distance from a building to the well.

    attic mold

Unless it was tested by a lab, it is not mold. It is a fungal growth. Very few are a danger to humans.

    Forgo slab insulation?

As a Contractor I would not warranty that slab if you put that system in before I placed the concrete.

Looking into buying an older Snap On Tool Box

Aren't Snap-On boxes lifetime warrantied? I bought a used Matco top and bottom a few years back and they sent me all new slides under warranty.

    OSB Wall/Ceiling Queations

The size discrepancy is to allow for expansion of the sheet goods. When installing OSB you should tack a nail between the panels and not **** them tightly because OSB will expand and contract depending on humidity levels, causing buckling of the sheet. I've seen it many times.
