I'm currently remodeling a 2 floor garage that was exisiting when I bought my house a year ago..It was built in 1960 into grade as you say..
Anyway, ive done the same thing as you, searched and found a few, then come up empty later..Ive probably entered...
I use a 6' level but they can be a little pricey if you don't have one.. A cheaper way is a straight 2x4 on edge with a smaller level on top..
As far as whats acceptable, everybodys has a different theory on that, but a lot depends on your finished floor material..

lots of good suggestions here..If you went the plywood route and didn't like the seams you can get rolls of laminate in lengths over 10' and in any color/style you want..just a thought,
