To finish the stair stone wall just stucco/parge it flat to the highest point and paint it. It will just look like drywall. Unless you are talented, get a pro to get a perfectly flat smooth surface.

Phillips head screws **** for long or thick screws so I don't use them those type screws.
For any screws long (over 2 inches) or thick (over #8) I use hex head or torex.
If you want to push or pull them over let a hose dribble on the roots overnight. Then they will come out easy if you cut the roots with an ax as they pull up into view.
