    Normal premixed 'joint compound' like that which is sold in a 5 gallon bucket, dries by evaporation. When you get into the powdered stuff, like Durabond, it dries by a chemical reaction. Humidity won't effect it. Once it dried, its dried I would just do it right from the get go
