I'd have the stem wall coated. You can install whatever trim/Baseboard and have them coat it as well or you can just install it later and paint it white or whatever color you want to use.

Have a couple of these, local pick up or can ship if not crazy expensive from here to wherever you're located (the closer you are the cheaper it should be). $100 each.
