    If concerned I would just add thickness to the web on either sides of the hole to reduce their ability to push the web together, but seriously in a residential application unless it is directly under some truss load etc I would think it is well over engineered.

    Nope ... web holds flanges apart and they live in compression and extension. As long as they stay apart they are happy.

    I would go with Option 1 but if all you are trying to do is push water away from your door then two should be fine. Use quick set self leveling. Side question, have you got any more info on your lift ? How high does it go ?
