Dude I love the transformation! I am personally a huge advocate of drywall over paneling or anything for that matter. A lot of guys will point out that it adds to the fireproofing. I just like how clean it makes everything look! Racedeck shouldn't cost you that much but definitely may suite you...

Most likely yes, I used Pitt-Thane for my top coat. Anything past 72 hours and sanding is recommended.
