You can get Phase Converters. You have to know about wiring or have an electrian hook them up. Check with Grainger for the converter
Now there's a proper grinder, a US Electrical Tool Model 500. .
US Electrical Tool grinders make all other grinders look like toys because they cater to foundries with their lines of heavy production grinders and snaggers. That grinder is the smallest one they build.

i seen a grinder just like that with a 24" grind wheel on it. it was also 3 phase and 2.5hp motor. it was a beast of a grinder and weighs all of 350 pounds

Get the right size wheels for it, the ones mounted on it are too narrow. Wider wheels add to the inertia, so more umph when the grinding gets tough.

Sounds like you're all set! A VFD is a good option, just be sure to install it in an enclosure.
Post up some photos as you install the VFD.
Thanx for the advice there, Grooveking. I need to get a stand fabbed up to so it'll be a while until it's put to use.
