Used to be able to put 2 bathrooms/outlet on one gfci circuit. Is it now limited to one? What and where are the rules for spacing General outlets? I seem to remember something about 12 ft apart and 2 ft from a door opening maybe? It's been so long I can't even remember where I read it.

No change to national code, maybe a local issue. As long as just receptacles one 20 amp circuit can serve multiple bathrooms. If also lights/fan then a single bathroom per 20 amp circuit.

High level: Any point along a wall in a residence can be no more than 6 feet from a receptacle which works out to every 12'. Applies to walls 2' or longer. Doesn't include hallways and non-living spaces.
