You could use that if the support spacing is proper. But it will also cost way more than the standard pole building metal siding, especially if you can find a manufacturer close by and buy direct.

Since you're strapping, have you considered sheetrock? Just saw 4x8x5/8" for less than $10 at HD. With mud and tape you're about half what the steel costs.

But steel is easier if you're alone.

Any Amish nearby? Sometimes they offer some great deals.

The metal siding offers some fire resistance. Not sure about the aluminum soffit panels. If it is an attached garage you should definitely have a fire resistant ceiling and adjoining walls. If a separate structure then it is still a good idea to slow fire down if you have a fire at some point. Do you weld in the garage?

Trying to understand how its only going to cost you $500 for soffit and trim? I can buy the metal panel for about $2.35 a square foot around here. Soffit panel runs more expensive around here, probably closer to $3 a sq. ft. or more depending on type. At $2.50, your over $1500 just in panels, then you need trim. Might want to check your math again. $0.8 a sq. foot seems really cheap.

I recently paid $24 for 12' x 16" Rollex soffit panels, which works out to $1.50 sq ft., but I did see some big box brand for about $17 per panel. Guessing they're pretty lightweight.
However, 24' x 26' is over 600 sq ft.

Ummmm....no way $200 US would even cover a 1/4 of your ceiling.

24x26 = 624sq feet total
Lets use Lowes pricing for an example.
Vinyl Soffit 10"x144"=1440"/144"=10 sq ft. Each piece costs $14.47 each.
624/10=62.4 pieces round up to 63x14.47=$911.61 US I know in Canada its higher cost, and this doesn't include any taxes. It also does not include any trim you may need.

Metal soffit costs more (no prices at Lowes, but I know its more) Plus you need a minimum of 2' on center structure to attach to, but expect it to sag as 16" on center is the preferred method.
