A place nearby sells new 3/8 mobile home drywall for 3.50 a sheet. It does have the flowery print on the face however this should be easy to paint over.

I was originally thinking osb on my wall but now leaning this direction.

3/8 too thin for a shop?

Too thin for what? How close are your studs? How much money are you really saving? It's all just an opinion and what you plan on doing with the walls.....I don't think ya want to be leaning on them.

My first thought is (China Drywall). If not, two sheets will give you a 3/4" wall, and at that price it is less than the cost of one sheet of 3/8" at Home Depot.

I had planned on osb for wall coverings and to do it lil by lil but at this price I may would do the entire shop at once. Would take 170 sheets. I am figuring buying that much drywall I may be able to get a lil better deal. Maybe 500 total.

I had also planned on 2' studs. (Pole barn). But with 3/8 I would think its best to go to 16" studs.

No. 3/8 for bending, or if you need to use a combination of thicknesses to match existing.

The only drywall I'd suggest is 5/8 type x for a shop/garage.

You could use the 3/8" drywall over OSB. That way you would get all the benefits of OSB (strength, ability to fasten things to it directly etc.) without the visual problems and would be able to use the 24" stud spacing. Wouldn't save you money but if you prefer the look of drywalld but the strength of OSB it might be worthwhile.
