What is the difference between using a 1-pole dimmer and a 3-way dimmer for a light? If I use a 1-pole will it be that I will have to always turn off the light with the same switch I turned it on with?

You use the 3 way dimmer if you have 3 way switches. Note that you can only have one 3 way dimmer switch the other mush be a standard 3 way switch.

If you use single pole, it will be your only switch.
So, yes, you'll always turn the light off with the same switch you turned it on with.
If you're considering adding a 3-way, just use wireless. It's so much easier to install.

Lutron makes a nice setup that allows you to dim from any location. I have a dimmer at the doorway and one on either side of the bed. It's not cheap, it was over $100 for the 2 3 way switches and the 4 way.

Or a zwave

HS-WD100+ 3way switch and a HS-WA100+ remote switch. 45+35=$80

or HS-WD200+, the newer version at $5 more

This will allow dimming and on/off from both locations.
Requires a neutral at both

Can also be controlled from other apps that have a zwave interface
