I used a very similar light - https://www.lowes.com/pd/Lithonia-L...t-Actual-96-in-x-2-62-in-x-2-16-in/1000703174 - in my 30x40x12 in a 6x2 configuration, just like you're looking at. Based on my experience I'd go to two rows of 7 instead of two rows of 6 for a nice bright shop. Mine works excellent for what I've got, but you're 6 feet wider and 8 feet longer. 6x2 would probably be adequate, but 7x2 would be nice and bright.

To get absolutely the best answer, check out the "The Best LIghting Fixture Ever" thread at https://www.garagejournal.com/forum/showthread.php?t=278420, there are multiple pages of reading to get yourself smart on lighting there. I used the computer application recommended by the OP (he recommended dialux and one other - the other one is what I used, can't remember the name) of that thread to plan out my lighting.

Was going to see if anyone thought 3 rows of 6 would be too bright, I can put the middle row on a different switch for use when needed
