I am running 6-3 ufb from home to garage for subpanel. What connector is correct for when it enters the panel

I assume you're asking about where the UF passes through the knock-out. You use a NM clamp.

6-3 w/grd UF cable is a flat one, and is pretty wide. Be very careful when you tighten the NM clamp on it as is can easily pinch the outer conductors while you are looking to get the middle of the cable tight. May need the 1" just because its so wide.
