A cover control kit with the Start/ Stop function is rather useless on a compressor, as it will not be able to restart automatically, even a "HAND / OFF / AUTO",(HOA), cover control kit would not be ideal since in the HAND mode the motor will continue to run even after the safety valve opens due to over pressure. The combination starter on my compressor was a former AG pump control panel that had a HOA control which was re purposed as as ON - OFF, & the start button was reused for a solenoid valve on the tank drain.
The cover control is 3-wire control, compressors need 2-wire control.

the pressure switch turns it off and on, but I can turn it off if I want

Well a closer look at the pull out disconnect I found that the pull out would not take a #6 wire. So I just ordered a GE TGN 3322 for $46.00 that will take up to a #2 wire and is rated for 10HP motor. Just posted this for anyone else following this thread. I just wanted this to be right by code. I will probably interupt the pressure switch for an easy on off function then I've got the best of both worlds.

I think the Start-Stop station pictured above by Pete is just a rocker-switch with a single contact on one of the states (like a Normally Open attached to On PB). It doesn't drop when the grid power drops like a 3-wire "seal circuit" would do. But, that's not as big of a deal imo since the machine is fully guarded and doesn't have people-chomping blades like saws do.

OK guys just an update on my compressor install. I recieved delivery of this past Friday. Its hooked up and running. Hard part was getting it in the room I have for it and getting it off the crate. I had my tractor with forks so that helped a lot.

Just would like to say thank you guys for all the help. It allowed me to have the rough in done and hook it up. I will put my little interuptor switch in later.

Its a moose 7.5 hp 22 cfm so I will now have all the air I could use.

Well I will try to post pics. I'm going in for surgery Tuesday so when I'm laying around recooping I'll try to post pics for all to see. Is there instructions on here for posting pics. I'm not real tech savay but mayby I can pull it off.

Again thanks for all the help. I think it turned out alright for a rooky.
