This may be a Garage Journal first, but I could be wrong! Hopefully you guys get a kick out of it…..

So my mother is pretty serious cook and enjoys some of the more "artisan" aspects of the culinary world. In the past we've made all kinds of specialty items, but mostly old school European stuff she learned from her Czech grandparents (breads, sausages, alcohol, etc.). Earlier this year she took a cheese making class and really enjoyed it. I didn't really think much about it until I stumbled across a YouTube channel all about cheese making and it kinda got me curious. I watched a few videos and did some reading about the various "tools" involved in the process and found out there is a whole cottage industry for cheese making. I thought a cool Christmas gift would be to get her some of the equipment required so she can learn a new process, and I can get some custom cheese.

The commercially available presses are all way overpriced for what you get, and a lot of them are wood, which isn't something I mess with. For the same money, I decided to make one that will actually hold up to some use. This style of press is known as a “Dutch Press”, which is well regarded for the consistent pressure they provide on the cheese mold. Apparently this is important when making harder cheeses such as cheddars and parmesans (keep in mind, I have zero cheese making experience). A key flaw I noticed in a lot of designs is they pivot on one point, which can cause your cheese to press unevenly under heavy weight; a problem noted in some of the videos I watched.

Thinking I can do better, I set out to design one with the following goals:

-Have some fun, and learn some new skills. Primarily, I wanted to further my abilities in CAD (Fusion 360) by working on an actual project with various aspects I’ve never modeled before.
-Use some new tools I’ve acquired.
-Weld some stainless. I never weld stainless, so I thought it would be cool.
-Get some time on my Bridgeport.

Design Considerations:

-Make it robust for heavy pressing ability
-Easy to clean
-No tools required to assemble/breakdown for storage
-Adjustable for various size molds (both height and diameter)

Materials:

-.188” 304 SS base/uprights/ram
-1” 6061 aluminum round stock for the arms and legs
-Stainless steel hardware throughout

Here are all of the components laid out on my kitchen table.

Another view of the arms/legs. All work was done with a .500” endmill to face the the ends and create the flats. The slots for the ram were done with a .1875” endmill. All the holes are tapped ¼”-20 for the knobs and rubber feet. The pin holes are .250”.

All of the hardware was sourced from McMaster. The pins are actually 2 different lengths, and are retained by ball detents. The knobs even have SS threads. The round spacer was made from the same material as the arms.

Bottom view of the ram. I didn’t get a pic, but the foot has a slot that the upright locates in. A quick pass with the TIG and you get pretty colored beads.

The slots in the base allow the “whey” juice from the cheese curds to run out. The whole thing is made to position over the kitchen sink. You can also see the various holes in both the uprights and ram for adjustment. The base was slotted for the uprights like on the ram foot.

The actual cheese mold. You can see the holes for the whey to drain out during the pressing process. This mold is 5.5” in diameter, and they are commonly available up to about 8” in diameter. This was actually sourced locally from a home brewer’s supply. They surprisingly had a decent selection of cheese making ingredients and supplies.

Fully assembled with the mold in place. The 4 eye bolts are to hang the weights from; the basic idea is they each produce different amounts of leverage depending on how much pressing force your recipe requires.

Here is a mock setup. The plates are 10lbs, 5lbs, 2.5lbs. I have a chart that provides the various values based on how much weight is required and where to hang it from.

All said and done, I think it turned out pretty cool. Kinda like an artisan press for making artisan cheese! If you look at the presses a lot of people use this thing is wwwaaayyyy overkill. Many people get perfect results using scrap lumber and misc hardware. Hopefully she likes it and gets some use out of it and sees that I tried to make it bitchin’.

I’m open to comments and input from those of your that may have experience with this stuff…...:beer:

The SS was $86 delivered for material/laser cutting/shipping. I could've done carbon steel cheaper, but I'd then have to powdercoat it (I don't paint). The aluminum was a whopping $13. I think the misc hardware was probably $45 as it was all SS (even the knob and feet threaded portions).

Geez....for a minute there I thought I was going blind.

That is an impressive bunch of work. If I were to have a concern it would be with the thumb screws. You said they were stainless as well as the other materials. Stainless screwed into stainless can lead to galling. I would suggest getting something in a different material, like brass maybe.

Thanks! The Stainless does gall, but in this case the stainless threads are going into the aluminum legs.

Nice work, very impressive pardon the pun.
My ex wife used to press finely cut slices of egg plant in olive oil, some here may have done it or have heard of it if you have any Italian in your DNA.
Sadly, best I could come up with was bricks in sealed plastic bags...

That might be Overkill, but that is how it should be!!!

This would fit nicely in a commercial kitchen....

Post a few pics to Etsy and see if you sell some.....

It only took me a Sunday to make once the laser cut parts showed up, but I don't know if I could sell them for enough to justify the time. The longest part was tapping the damn holes cause the tap I had was garbage.

Yeah, a quick pass with the Tig. The puddle definitely flows differently than 4130 or other carbon steels. I just like the nice rainbow color the filler produces.

A suggestion; 1/4 threads are usually 20 or 28 threads per inch on hardware,maybe the 32 mentioned was confused with #10 hardware?

Fixed. It was 1/4"-20. I had 10-32 on my mind as I was ordering hardware right before I typed this up.

A good build,I see kits if you are inclined to make them.....

I'd be glad to send someone the laser files and McMaster part numbers.
